something sweet- all the basics

It's hard to make a salad work, if it has all the usual basic ingredients (lettuce, cucumber & tomato) and also has other fruits added!

It is a challenge, since tomatoes clash with many other fruits including apples, and citrus such as mandarin oranges. But this one does OK, because the tomatoes are just a garnish and because the pears are mild & crunchy, so they don't clash with tomatoes like apples or oranges would!

Crab Salad with pears & Hazelnuts

I got this idea from a fancy restaurant in Oregon (where they grow a lot of hazelnuts).

1 1/2 cups fresh lump crab meat (you can also use imitation crabmeat.)
1/2 cup chopped roasted hazelnuts
1/2 cup finely chopped celery or cucumbers
1 firm, but sweet pear, finely chopped
1/4 cup finely chopped red onion
1-2 Tbsp thinly sliced fresh mushrooms
2 Tbsp lemon juice & 1 Tbsp olive oil (or 3 TBSP raspberry vinaigrette dressing.)
Freshly ground pepper
Salt to taste
4 large handfuls of butter/boston lettuce or soft leaved lettuce such as red leaf or green leaf, rinsed and patted dry
4-8 cherry tomatoes

In a medium sized bowl mix the hazelnuts, celery/cukes, pear, onion, mushrooms, lemon juice, olive oil, ground pepper, and salt. Gently fold in the lump crab meat, trying not to break up the crab too much.

Make individual servings, about a half cup each over a handful of butter lettuce. Garnish with cherry tomatoes.

You can make this salad even sweeter & fruitier by substituting raspberry vinaigrette dressing for the lemon juice & olive oil, if you prefer. :)

Serves 4.

I like this layered salad:

Lettuce, torn
green bell pepper, chopped
red onion, chopped
salad dressing, not mayonaise
la seur green peas, drained
chopped boiled eggs
shredded cheddar

"layer" all ingredients, "layered" salad, LOL, don't mix it up or toss it!

Of course, you can add as many layers as you want, like chopped tomatoes, green onion, cucumber, brocoli, etc.
The possibilities are endless. You just have to find your own favorite layers and taste combinations.


Another favorite salad of mine is frito salad:

Put torn lettuce in a bowl
Lay fritos on the lettuce
In a separate bowl, mix catalina french salad dressing with a can of Ranch style beans
Pour beans over fritos
Cover with a combination of green bell peppers & red onion
& shredded cheddar
ENJOY!

May sound like a strange combination, but it is delicious!!

A good salad with chicken:
1 bag romaine lettuce (or your preferred lettuce)
3-4 green onions, sliced thin
1/4 Cup toasted sliced almonds
2 TBS toasted sesame seeds
2 C chow mein or rice noodles
2-3 grilled chicken breasts, cut in bit sized pieces

Mix together in a jar, shake well and pour over the above:
6 TBS sugar (or sugar substitute)
1-1/2 tsp salt
3/4 tsp pepper
6 TBS flavored vinegar, like red wine vinegar
3/4 C. veg. oil

I like to make the dressing first and chill for an hour if possible, then dress the salad just before serving.

Try this one.
Quickly boil some asparagus for about 1 minute and put into cold water immediately to stop the cooking process. Drain well.
Take 1 can of whole baby beetroots and drain well. Peel 1 large oranges and cut out the segments. Roast 1/2 cup of pine nuts and cool.
Lay a layer of asparagus on a plate, top with beetroots cut into half, top with some orange segment and put some chunks of goats cheese on top of everything. Sprinkle with the roasted pine nuts.
Make a dressing of olive oil, lemon juice, red wine vinegar and chopped basil leaves.
Pour over with some cracked black pepper.
You can use any amount that you want.

This girl I dated, in Italy, made this for me. Delish!

2 heads of romaine lettuce,
torn into bite-size pieces
1/2 pound Gorgonzola or
other blue-veined cheese, crumbled
2 Green apples,
unpeeled and thinly sliced
Honey-Mustard Dressing
1 cup toasted pecans or walnuts, chopped

In a large salad bowl, place the lettuce, cheese, and apples. Before serving, add enough dressing to coat the lettuce. Add the pecans and toss well.

Honey-Mustard Dressing
Blend the following ingrediants:
1 tablespoon Dijon mustard
3 tablespoons balsamic or red wine vinegar
1 tablespoon lemon juice
1 tablespoon honey
1/2 cup olive oil
Salt
Freshly ground black pepper

I don't know what type of salads you need...so I hope these work

MEAL IN ONE SALAD

2 c. thin strips cooked meat or poultry
1/2 c. cooked peas
1/2 c. shredded crisp carrot
1/2 c. diced celery
1/2 c. chopped tart pickle, or ripe olives
1/4 c. French dressing
1/2 tsp. curry powder, optional
Salt
Salad greens
Pickle beets, radishes or tomatoes

Combine meats, peas, carrot, celery, pickle and French dressing with a fork. Use a light touch. Cover and keep in the refrigerator about 2 hours to chill and blend flavors. Spoon lightly onto shredded crisp salad greens. Garnish with sliced pickled beets, radishes, or tomatoes.

OLIVE AND GARDEN SALAD

Black olives (pitted)
Sm. green olives with pimento
Sliced celery
Chopped green onions
Artichoke hearts, can or jar
Banana peppers, sliced
Cauliflower, fresh or can
Green olives (pitted)
Sliced carrots
Sliced radishes
Fresh mushrooms, sliced, can or jar o.k.
Pepperoncini
Cherry peppers
Pickles (Vlasic Hot Mixed Pickles)
(Includes cauliflower pieces)

Marinade: Oil, vinegar, garlic powder, sweet basil, oregano, parsley flakes, black pepper, crushed red pepper, thyme and rosemary leaves.

FRUIT SALAD

INGREDIENTS:
2 cups tart apples, diced
1 cup seedless grapes, green
1/2 cup Mandarin orange sections
1 cup miniature marshmallows
1/2 cup pecans
2 teaspoons lemon juice
1 cup whipped cream
1/4 cup sugar
PREPARATION:
Coat apples with lemon juice; mix in grapes, orange sections, marshmallows, and nuts. Combine sugar and whipped cream. Mix thoroughly. Fold fruit into cream. Serve immediately or chill.
Serves 6.

VEGETABLE SALAD

INGREDIENTS:
2 cups frozen green peas, lightly cooked and drained
1/2 cup thinly sliced celery
1/2 cup unpeeled chopped red apple
2 teaspoons minced sweet onion
3 tablespoons mayonnaise
3 tablespoons sour cream or plain yogurt
grated or shredded cheese

PREPARATION:
Combine peas, celery, apple, and onion in a medium bowl; set aside. Combine mayonnaise, sour cream, and cheese; pour over pea mixture, tossing gently. Cover and chill.
Serves 4.

Hummm. If you want to have a healthy snack that still tastes good. Cherry tomatoes, green onions, bacon bits, and ice burg green lettuce, maybe some spinach leaves, and just a LITTLE parsley. Then get either a vinaigrette dressing (except it's really expensive, but it's really healthy and good :) ) or a ranch dressing.

I like Orange and Avocado salads: Take your favourite lettuce, I like a mesclun mix, and slice some avocado and thin orange slices over it. You can dress the salad with some chopped walnuts or pecans as well, and a simple vinaigrette like raspberry dressing.

My fav is to take chicken breast (shredded from a can)
lettuce
tomato
craisins
onions
pistachios
Mandrian oranges
and a delicious vinagerette dressing (pref. raspberry)

also grilled salmon fillet works amazing w/ these veggies!!
