Do I put the whole piece in there or just a portion of it? I also will put in ham pieces in it as well. I've never used it before, so I don't know anything about it.

cut off just a piece of the bacon ... about 3 inch long piece, depending on how salty you want your beans. but dont use much extra table salt! It is salty enough with the bacon.

Like you , I had never used jowl bacon until rather recently. I was kind of disappointed by the level of flavor. As a matter of fact,I was preparing green beans too. In the future, I'll stick with smoked turkey wings/necks or center cut bacon for additional flavor :)

You are adding the jowl meat for flavoring mostly and not for meat to eat like a steak so you don't want to use the whole portion unless you have a really huge pot of beans.

Unless you are really into Jowl Bacon, just use regular bacon and use two or three strips.

It's like fatback, just a big hunk of smoked fat, maybe a bit of lean meat, and sometimes skin. For a big pot of beans, I'd use a hunk the size of your first 2 fingers. Render a bit in the pan, add onions to that, THEN add green beans to that.
