I cook chicken a couple times a week, some of my favorites are from Kraft Foods. Check them out and I am sure you will find something you like too!

CHICKEN PARMIGANA

4 boneless, skinless chicken breast halves
2 eggs, beaten
1 c. Italian style bread crumbs
1/3 c. olive oil
15 1/2 oz. spaghetti sauce
1/2 c. Parmesan cheese
1 c. shredded mozzarella cheese

Preheat oven to 400 degrees. Dip chicken into egg and then into bread crumbs, coating thoroughly. In a medium skillet, heat olive oil. Cook chicken in oil until done and well browned on both sides. Pour spaghetti sauce into an 11 x 7 inch baking dish. Place chicken on sauce and top with Parmesan and mozzarella cheese. Bake for 15 minutes or until cheese is melted and lightly browned. Makes 4 servings.

Southern-Fried Chicken

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard

1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.

2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels

I stopped eating Chicken because of all the steroids and crap they put in them.
When I did eat it I liked Chicken fingers w/honey mustard.
