Fried Chicken with Creamy Gravy
* 1/3 cup all-purpose flour
* 1-1/2 teaspoons poultry seasoning or paprika; dried basil or marjoram, crushed; or 1/2 teaspoon garlic powder or onion powder
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2-1/2 to 3 pounds meaty chicken pieces (breast halves, thighs, and drumsticks)
* Cooking oil
* 1 recipe Creamy Gravy
* Mashed potatoes (optional)
Directions
1. In a plastic bag combine flour, poultry seasoning, salt, and pepper. Add chicken pieces, a few at a time, shaking to coat.
2. Add oil to a 12-inch heavy skillet to a depth of 1/4 to 1/2 inch. Heat over medium-high heat until hot enough to sizzle a drop of water. Reduce heat. Add chicken to the skillet. (Do not crowd skillet. If necessary, use 2 skillets.) Cook, uncovered, over medium heat for 15 minutes, turning to brown evenly. Reduce heat; cover tightly. Cook for 15 minutes. Uncover and cook for 5 to 10 minutes more or until chicken is no longer pink (170 degrees F for breasts; 180 degrees F for thighs and drumsticks). Drain on paper towels, reserving drippings for gravy. Transfer chicken to a serving platter; keep warm. Prepare Creamy Gravy. Serve gravy with chicken and, if desired, mashed potatoes. Makes 6 servings.
Creamy Gravy: Pour off drippings in skillet, reserving 2 tablespoons. Return reserved drippings to skillet. Add 2 tablespoons all-purpose flour; 1�8 teaspoon pepper; and, if desired, 1 teaspoon instant chicken bouillon granules, stirring until smooth. Add 1-2�3 cups lactose free milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 minute more. (If necessary, thin with a little additional milk.) Makes 1-2�3 cups.

You have lots of good recipes already listed. One thing I do want to add, when I first made fried chicken, I watched my mother fry it but didn't pay attention to what she did after that. So I floured my chicken and browned it in the skillet and put it on the table. Because all I had done was brown the outside, the inside was still raw. I didn't pay attention to the fact that she put it in the oven for 30 minutes after browning it. So, if your chicken recipe that you received talks about frying it for a very short period of time "until it browns", be sure and place it in the oven to bake for at least 20-30 minutes after that - depending on the piece of chicken you use. Chicken thighs, drumsticks and breasts on the bone take longer than just boneless chicken breasts.
Wanted to keep you from having the same mistake I did. I kept trying to convince my brother that the red on his plate wasn't from the beets that were next to the chicken - but they were totally different colors!!

if its not cut then you need to cut it up into pieces ,,,wash it off and let it drain while you put flour about 2 cups into a bag,add salt and pepper about 2 tsp each and sprinkle the meat with a small amount of salt and pepper ,,let the grease heat up in a pan it should be about 1/4 deep or a little more on med heat ..stick the chicken in the bag a few at a time and close it and shake,put them in the grease and add more sake and put in pan untill full or you run out of chicken,then let it cook for about 10 min or 15 but make sure its not burning lower the heat if to high,,when good asnd brown turn it then let it go again ,,,then about 10 min or so then turn to the sides to brown them add grease if needed.check the fatest part of the dark meat to see if it done ..if it is then the rest should be ok but check by poking with fork and then push down if no blood runs out it should be ok

Put some flour in a bowl and put some salt and pepper in with it. cut the chicken into peaces if it's still whole. put olive oil in a pan and get it hot. Evenly cover the chicken peaces with the flour and them fry it in the pan. I know it dosent sound very complex but it's a good fast way to do it. Ad anything that sounds good to you. Good luck.

CLASSIC SKILLET FRIED CHICKEN
3/4 c. all-purpose flour
1 tsp. salt
1/4 tsp. pepper
1 (2 1/2 to 3 lb.) frying chicken, cut up or use chicken pieces
1/2 c. Crisco shortening or Crisco oil
1. Combine flour, salt and pepper in paper or plastic bag. Add a few pieces of chicken at a time. Shake to coat.
2. Heat Crisco shortening or Crisco oil to 365 degrees in electric skillet or on medium-high heat in large heavy skillet. Fry chicken 30 to 40 minutes without lowering heat. Turn once for even browning. Drain on paper towels. 4 servings.
NOTE: For thicker crust, increase flour to 1 1/2 cups. Shake damp chicken in seasoned flour. Place on waxed paper. Let sit for 5 to 20 minutes before frying.
VARIATION--SPICY FRIED CHICKEN:
Increase pepper to 1/2 teaspoon. Combine pepper with 1/2 teaspoon poultry seasonings, 1/2 teaspoon paprika, 1/2 teaspoon cayenne pepper and 1/4 teaspoon dry mustard. Rub on chicken before step 1. Substitute 2 1/4 teaspoons garlic salt, 1/4 teaspoon salt and 1/4 teaspoon celery salt for 1 teaspoon salt. Combine with flour in step 1 and proceed as before.

EASY OVEN FRIED CHICKEN
1 cut up skinned chicken
1 stick melted butter
2 c. Bisquick
Pepper, paprika
Heat oven to 425 degrees, put melted butter in cookie sheet. Mix 1/2 tsp. pepper and 1 tsp. paprika with bisquick. Dip each chicken piece in mixture, coating well. Place all pieces on cookie sheet. Bake 30 minutes turn over chicken, brown other side. Bake 30 to 40 minutes more until done.

EASY OVEN FRIED CHICKEN
1 chicken cut into 8 pieces, or any parts you prefer
3/4 c. cornmeal
Corn oil
1/2 tsp. dried sage
1/2 tsp. garlic powder
Salt and pepper to taste
Preheat oven to 350 degrees. Wash and pat the chicken dry with paper towels. Place the cornmeal seasoning and chicken in a strong plastic or paper bag. Close securely and shake until the chicken is well coated. Brush or pour a thin layer of oil in the baking pan. Place the coated chicken parts on the oiled pan. Bake for 1 hour turning once in the course of baking. Serves 4.

easiest way: dip chicken in beaten eggs, then in flour. you can put flour and chicken pieces in paper bag and shake. add seasonings you want, like salt, pepper, etc. to flour. fry in deep pan of med.-high hot grease. brown on all sides. drain on paper towels.
