lean would be low in fat.

in terms of dieting this would mean eating proteins that have little to no fat per serving. these are proteins like egg whites, many types of white fish, skinless poultry and lean cuts of beef.

The term "lean" refers to muscle with very little fat on it. For instance, a steak is lean when the fat is trimmed off the edges. Chicken breast is lean because it is all muscle (high in protein).
Meat that is not fatty is considered "lean".

To eat lean would be to eat low fat, high protein, healthy foods (not fried!). Chicken and fish are both very high in protein and good for you as long as they are prepared in a healthy way. Grilling, steaming, baking, etc are all good. Just stay away from fried meats because they are high in saturated fat.

Just as lean meat is important, don't forget about vegetables, fruits, and grains too!
