When you strength train, your muscle fibers are literally being torn. They get bigger because more muscle tissue is formed to fix the damaged parts. This takes time. If you strength trained every day then you would put too much stress on your muscles and end up spending weeks recuperating. Which is better: a day or two here and there, or 6 weeks at a time?

Giving an exaggerated example, Bruce Lee did so much strength training everyday that his heart couldn't take it anymore, and it failed. He died at around 32 or 33 from the overtraining, but he was really muscular and thin.
It's good to do some strength training, but you should do it every other day instead of daily. It stops height growth as well.

You should really rest the muscles you have used for a day before excercising again. So if you alternate maybe legs one day then upper body the next and so on. This gives the muscles a chance to rest ready for action the following day. Taking a supplement for your bad knee might help too, we have a good cream that gives joints back the msm they need thus making them more supple.

You can damage your body. A friend of mine tore his rotator cuff from bench pressing too often.

You probably overdo it and lift more than you can handle. Dont overdo it and rest when you can.
