What are the mandatory things I need to buy and what are some of the cool things I should buy to go along with it?

Do NOT buy the 40GB version. Get the 60 or 80. The 40GB one cannot play and upconvert PS2 games...what a rip.
As for what else to get...Guitar Hero is an addictive game for any music lover. 2 guitars is even better.
I would also say to check out Ratchet and Clank. It's a great series.
Hold off on buying an extra controller off the bat. New ones are coming out with rumble. If you can wait for it, do so.
If you have a HDTV, make sure you have an HDMI cable for the best possible picture.

A game would be nice unless you get the 80 gb version which comes with Motorstorm. Not a bad game, but it's kind of short because there's not a lot of tracks.
HDMI or component cables if you have a HD TV. You can also use the PS2's component cables on the PS3.
You could get another USB mini cable to charge 2 Sixaxis at once.
You might also consider getting another Sixaxis.
If your husband still has a PS2 and he wants to play his PS2 games on his PS3, you might want to get the memory card adapter so that he can transfer his saves.
Do not get the 40 gb PS3 if your husband wants to play PS2 games on his PS3. The 40 gb doesn't support backward compatibility.

if you guys have an HDTV then i suggest you to grab a HDMI cord. also if you are going to buy an extra controller then you should buy the pelican charge station. its really nice looking, here is the picture- http://gear.ign.com/articles/828/828344p1.html

2). Bluetooth headset (for online gaming)
3). 1080p HDTV
4). If you already own HDTV - you'll need an HDMI cable
