Garlic bread gets my vote too!
For vegan garlic bread drizzle slices of Italian or French style bread or the bread of your choice with good olive oil, toast in an oven or toaster oven. Rub with a garlic clove right when you take it out of the oven.
For a different taste roast the garlic in aluminum foil with a little olive oil, cut the top off first but leave it in the skin. Then smear a clove or two on the toasted bread the cloves will squeeze right out. It'll be sweeter and milder than rubbing the bread with raw garlic.
Or toast the bread as before and create a garlic dipping oil by sweating some garlic and maybe herbs in olive oil until the oil has taken on the flavor of the garlic and herbs.

ratatouille is a side dish. If you are serving it as a main course, i would suggest you serve it with or over a starch.

I had that tonight but I got some beansprouts, peppers, mushrooms water chestnuts and beansprouts and stir fried it all together, don`t need a side dish
