Potato soup is very hearty, so a lighter dessert would be best. I would stay away from desserts with milk in them, as you have that in the soup. How about a nice cobbler or chocolate cake? Cookies or brownies are great too. Desserts can be big or small. It just depends on how much room is left after that great soup!

That's a tough one, with no eggs or milk! But one of these might work:) APPLE CRISP 1 large can pre-sliced pie apples 1 cup sugar 3-4 tsp cinnamon 1/2 lb. butter (substitute non-dairy margarine) 2 c. flour 2 c. oatmeal 1 lb. brown sugar Put undrained apples in greased (or sprayed) 11x9" pan. Add sugar & cinnamon and mix. Melt butter; combine dry ingredients. Mix together and put on top of apples. Bake at 350 for 45 min. You could top it with ice cream for the others; and Cool Whip for the vegan:) PISTACHIO FLUFF 1 small pkg. pistachio instant pudding mix (or other flavor) 1 9-oz. container Cool Whip 1 8-oz. can crushed pineapple 3/4 c. chopped nuts 1/2 c. miniature marshmellows (OMIT for a vegan dessert - maybe add more nuts instead) Combine all ingredients and chill several hours......

Since the soup contains cream, I would stay away from ice cream or anything too heavy. I would suggest a nice mixed fruit dessert, possibly topped with shurbet.

I'd make a fruit dessert and one thats easy. Fruit offsets the heavy soup and clears the pallet. You can also make a REFRIGERATOR DESSERT to offset the heat of the soup.

Best wishes and good eating, D~

How about chocolate cake? It will be a nice bold flavor after your potato soup.

I'd either serve some kind of fruit cookie or make krumkaka bowls (a cookie you shape around something like a custard cup) and put a scoop of ice cream in it.

The Krumkakas can also be shaped around a fluted object that would shape it like a cone and fill it with fruit and whipped cream or custard cream.

A potatoe soup is a warm, hearty meal and quite autumny so base it on that. Something warm, stody childhood like (treacle sponge, trifle....things like that) it could also be fruity too. But serve it warm.

Depends. Is it a rich vichyssoise (with cream and pureed smooth) or a light, chunky broth based variety?

If it's a cream based one, go with something light, like good organic strawberries marinated in balsamic served with homemade biscotti and creme fraiche.

If it's broth based go with something a little richer, maybe some homemade ice cream cookie sandwiches. Make cookies using an ice cream scoop to dispense so you get all even sized big cookies. Homemade ice cream is easier than you think, milk, cream, eggs, vanilla and sugar.

Homemade makes all the difference in the world when you are using simple ingredients. You can't use second quality either. Look for organic foods to brighten your cooking. The flavor can't be beat...

I would go with something cold and crunchy.

Like Vanilla sticks!

Take one scoop of ice cream and stick it with a Popsicle stick, Freeze until firm. Dip into melted chocolate, then cover in nuts and freeze again.

Because the soap is so think and hot, the crunchy cold will be nice on your pallet.

Good luck!
