Wash with cold water and brush, poke holes with fork all around, rub with olive oil, sprinkle with salt, pepper or whatever you like and bake on oven rack at 350 for about an hour, add 15 min for every spud over 2. Wrapping with foil will trap the moisture and make a mushy potato.
To soften up the skins take out of oven and place in container with a tight lid for about 5 minutes, the steam will soften the skin.

Pick the right kind of potato.
Some have thinner skin and some are thicker.
Baking potatoes are the best.
I wrap them in aluminum foil before baking in the oven. They always seem to come out moist.
In the microwave, I wrap them in a paper towel.

Try rubbing your potatos with olive oil and then sprinkling with kosher salt. Wrapping them in foil before baking will also soften the skin at eating time. I also like to sprinkle the skin with fresh rosemary. Yum!

What I like to do is to first pierce my potato and then rub butter all over it and wrap it in foil - then bake!!! Never had tough skin!!!

If your in a hurry, wash potatoe very well, with a scrub brush, slice the top diagonally, place on a microwaveable plate and nuke with the button marked "Potatoe" on most micros. It comes out nice and soft and yummy! ♥

Use foil, wrap them. I love the "leather" like skin! My hubby likes his skin moist, so I wrap with foil. (That's if using an oven.) For Microwave, wrap with plastic wrap and poke a couple of holes in the plastic.
