You never heard the expression "Like two peas in a pod"?

Its more work/labor intensive than opening a can or cooking a frozen bunch of BBs, but in my opinion, its definitely worth it - if you have the time.

A] Boiling salted water,
B] drop in the shucked peas,
C] bring the water back to a boil.
D] Cook about two minutes. Test a few by tasting. If that's the consistency you like, remove from the heat, drain in a colander/strainer and run cold water over them.
E] Still too hard? Cook another 2 or three minutes and repeat the test.

PLEASE don't use baking soda. It keeps the bright green color, but if you have any left over, the chemical reaction between the baking soda and peas will keep that pretty bright color, but the next day the peas will be mushy.

Frozen is fresh. Mushy is rotten.
Peas with premium quality are frozen.

Mushy mmmmm! You can buy pre soaked frozen peas, the advantage of these is that you can do as few or as many as you need. Seeing as it's Nov. 5, we have some black peas on the go !

Canned (and mushy) for pea salad, but frozen for anything cooked. They keep better in cooking.
