Fill the wok with good oil that won't smoke easily. Try sesame or peanut oil. You need to deep fry, so add about 3 inches of oil to the wok and heat until really hot.

Shave your potatoe into thin slices, about 1/8 of an inch thick. Use metal tongs to gently place the chips into the oil. Don't stack them up. Give them plenty of room to curl and dance in the oil. That means cooking 5 or 6 at a time in a small wok.

Remove chips from oil using tongs or a metal strainer and place on brown paper bag to dry. Even better, dry on a grill.

Salt the chips.

Safety Note: This hot oil is extremely dangerous. Let it cool for an hour before attempting to dispose of the oil. If you add water to the hot oil it will explode and you can get badly hurt.

Just ut enogh oil or lard in to cover the chips and make sure it is hot before you put the chips in or you will get soggy chips but it is best and safer to use a chip pan or equivelant.

Straight sided pan best. Configuration of wok (slanted sides) does not keep oil hot enough.

Cooking them in the oven could be safer and tastier!! Slice into thin pieces (if you like them crispy) par-boil for about 5 mins, drain, then put onto oven tray, sprinkle with whatever spices take your fancy and a little olive oil. Yum yum!!!!

just put in lots of oil, about half of the wok. then have a strainer ready so that you can drain whatever you deep fried.

lol, with a couple of inches of oil. i dont know if it would be the best idea tho? id use a chip pan - might be safer

Add oil - Canola, Soy or Corn... etc.
Heat to 350F
Add food and cook until desired doness.
