I'm thinking about operating a chicken/hot wing business. Can someone please tell me what kind of oil would be great for it?

And any advice in running a restaurant?? Thanks.

Well peanut oil is best for frying, but I just bought the standard fryer oil before people were concerned about trans fats.

Advice? I have plenty. About 9 years' worth of owning one. First, start with a lot of money and patience. Second, have a lot of money to burn. Third, email me for any more specific questions and I'll try to help. I look back on it and can't believe I kept up with the stress. But I don't regret it at all.

Canola, Vegetable (which is soybean), peanut and corn.

What you can do is go down to a restaurant supply place to price out oils... Smart and Final, Cash and Carry or a local place to you.

Peanut oil is preferred for its higher moke point, but the price is higher as well. Canola oil would be pretty good, and is significantly cheaper
