I can do the normal thin ones that you have with lemon and suger etc. but what is the difference in recipe to make them like the american dollar pancakes?

here is my recipe for light fluffy scotch pancakes
200g self raising flour
pinch of salt
25 g castor sugar
1 tablespoon syrup
1 large egg
1/4 pint milk
sift all dry ingredients together add syrup egg and milk. whisk untill a smooth consistency batter, cook on a hot griddle /hotplate or non stick pann for 2 mins each side.

this recipe makes 12 pancakes, so double the amounts for a bigger batch good luck xx

Scotch Pancakes


Description/Notes:

A pancake that’s not only a teatime treat but is equally delicious fried with bacon and egg for breakfast, if you manage to have any left over. Scotch Pancakes are also known as Drop Scones

Ingredients:

Half an ounce (15g) butter

1tbsp milk

1tbsp glolden syrup

6oz (175g) plain flour

1tsp cream of tartar

2tsp baking powder

1 egg

quarter pint (150ml) milk

1oz (25g) caster sugar

pinch of salt

Cooking Instructions:

Place the syrup, butter and 1tbsp of milk into a small pan, heat gently until ingredients are melted then leave to cool

Sift the dry ingredients together in a mixing bowl then make a well in the center

Add the egg, melted ingredients and half the milk before using a spoon to mix into a thick batter

Stir in the remaining milk, beat for a couple of minutes until the batter has a thick coating consistency

Stand for 15 minutes

Lightly grease a griddle or heavy based frying pan warmed over a medium heat

Drop tablespoons of the batter onto the pan of griddle and cook until bubbles rise to the surface and burst

Turn the pancakes over with a palette knife and continue cooking until a golden brown

When the pancakes are cooked. Place them between two clean tea-towels on a wire rack

Serve buttered and top with syrup or jam

Do you mean "silver dollar" pancakes? They are the same batter as big pancakes, just poured into small dollops, the size of a silver dollar coin. Maybe 1 Tbsp. of batter each.

Here's a good recipe.


Fluffy & Light Pancakes

2 1/4 cups Self-Rising Flour
1/4 c melted butter or margarine
2 tsp. sugar
2 cups milk
2 eggs, separated

Combine Flour, margarine, sugar, milk, and egg yolks. Beat egg whites until stiff. FOLD egg whites into batter. Cook on greased griddle.

have a look on an English web site for cookery. We call them "drop scones" and you will need a griddle ( or a good frying pan, and creme of tartar. Everything else will be in your cupboard I suspect. They are easy:

1 scant cup self-raising flour
1/4 teaspoon salt
1 tablespoon margarine
1/4 cup sugar
One egg, beaten with 3 tablespoons milk
half teasp creme of tartar.

mix sugar and margarine and then the egg & milk, finallay add the flour and cree of tartar to make a heavy batter. Add a little more milk if necessary. Lightly grease the frying pan and get it hot and ad a spoon of the batter. pop any air bubbles and turn over when brown
