Kosher salt
Cracked Black Peppercorns
1 cup red wine
1/2 pt Heavy Whipping Cream
Elk meat can be gamey, so first, soak the meat in ice cold water for a few hours, to make sure most of the blood has come out. Next, coat in kosher salt and let sit about 30 minutes, so the steak comes to room temp. The kosher salt will help draw moisture to the surface of the steak. Brush off the excess salt, and coat both sides in cracked black pepper. Heat a stainless steel skillet to med heat, and sear the steak on both sides. Then, cook until desired doneness. Remove steaks, and set range temp to low. Pour red wine into skillet, and whisk until all the remaining crust is disolved. Whisk in whipping cream, and reduce by half. Pour over steaks and enjoy.

I have found that cooking Elk for a long time until the meat is falling apart takes away the gamy taste and also it will never be tough like when you grill it or pan fry.
This recipe is simple and delicious!
Elk Pepper Steak
Ingredients:
1 lb Elk Sirloin Steak
1 Clove Garlic, Crushed
1 Tsp Ground Ginger
2 Tbsp Oil
1 Tsp Salt
1/2 Tsp Pepper
2 Medium Onions, Thinly Sliced
1/2 Tsp Sugar
3/4 Cup Beef Broth
1/4 Cup Soy Sauce
6 oz Water Chestnuts, Sliced
2 Large Green Peppers, Cut into Strips
1 Tbsp Cornstarch, Dissolved in 1/4 Cup Cold Water
Directions:
Cut steak across grain into 1/8 inch slices. Saute garlic and ginger in oil in skillet until garlic is golden. Add steak slices and brown lightly, about 2 minutes. remove meat and place in crockpot. Mix salt, pepper, onions, sugar, beef broth, soy sauce and water chestnuts and pour over the meat in crockpot. Simmer on low for 7 hours. Add green peppers and simmer for an additional hour. Add cornstarch mixture and simmer until thickened. Serve plain or over hot cooked rice.

My daughter has Elk every year since my son-in-law hunts. She always soaks it in milk before cooking it. Then you can cook it the way you would beef. Because it is a much leaner meat than beef you will need to add oil/butter or something to keep it from sticking if you fry it. Really good with a little salt/pepper, dredged in flour, quick fried till brown. Turn the heat low and cover, let simmer for about 30 min. for it to get tender. It does have a really good taste, so happy cooking and enjoy.

I always marinate it first. It can be tougher than beef and sometimes has an odd odor when you cook it. You can grill it, you can cook it just as you would a beef steak. The marinade helps to tenderize it and make the smell more like what you are used to. Don't over cook it though, that will make it really tough.

Try finding a recipe for venison, should cook about the same with similar spices.

I made elk kabobs, we just rubbed the meat with olive oil, seasoning (your choice) and slid them onto skewers with bell peppers, onion and tomato, then grilled, they were great!
