There are a million wonderful cheesecake recipes to be found on the internet. I have a few family favorites I make.

Here's one I've made MANY times... always a huge hit: I would search the allrecipes site for more cheesecake recipes. It's probably my favorite site for finding new, and good recipes.

Here's a recipe my mom used to make and I've made for the family many times. I've used this same crust for other cheesecake recipes:

DINAH SHORE CHEESECAKE

CRUST:

1 3/4 c. graham cracker crumbs
1/4 c. finely chopped walnuts
1/2 c. melted butter

FILLING:

2 (8 oz.) pkgs. Philadelphia cream cheese
3 eggs
1 c. sugar
2 tsp. vanilla
3 c. sour cream

Mix crust ingredients. Remove 3 tablespoons for topping. Press remaining on bottom and up sides of 9" spring form pan.
Combine eggs, cheese, sugar and vanilla. Beat until smooth. Blend in sour cream.

Pour into crust. Top with reserved crumbs. Bake at 375 degrees for 1 hour. Chill 4 to 5 hours before serving.

BEST CHEESECAKE EVER

Crust
2 cups grahm cracker crumbs
1/2 cup sugar
4 Tsb melted butter
1 large egg white lightly beaten
Preheat oven to 375
Mix all crust ingredients and press into bottom and a little way up sides of 10 inch springform pan.
Bake for 5-10 minutes
Cool until reaches room temp.

Filling
5 packages of cream cheese
1 3/4 cups of sugar
2 large eggs
1 Tsb fresh lemon juice
1 Tsb vanilla extract..pure if have
2/3 cup heavy cream

Reduce oven to 325ºF.
Wrap bottom of sprinform pan with alumium foil. A few sheets.

Beat cream cheese and sugar until smooth. Best if done when cream cheese is at room temperature.
In a small bowl lightly beat eggs, lemon juice and vanilla.
With mixer running slowly add egg mixture to cream cheese. In about 4 increments.
Add heavy cream next. Mix well.

Pour cream cheese filling into springform pan.
Place springform pan in a shallow roasting pan and fill roasting pan with enough hot water to come up half inch of springform pan.

Bake for 60 to 90 minutes, or until center is firm .

My favorite and best recipe comes from
Better Homes and Gardens cook book, I've had it for 21 years.

Cheesecake Supreme
3/4 c. flour
3 T. sugar
1 t. finely shredded lemon peel
6 T. butter or margarine

1 slightly beaten egg
1/2 teaspoon vanilla

3 8oz. packages cream cheese, softened
1 c. sugar
2 T. flour
1/4 t. salt
2 eggs
1 egg yolk
1/4 c. milk

cherry sauce oven at 400'

To prepare crust, combine the 3/4 c. flour the 3 T. sugar and 1/2 t. of the lemon peel. Cut in the butter till crumbly. Stir in 1 slightly beatne egg yolk and 1/4 t. of vanilla. Pat 1/3 of the dough onto bottom of an 8-9" springform pan. (with sides romoved). Bake in a 400' oven for 7 minutes or till golden; cool.
Butter the sides of pan; attach the bottom. Pat remaining dough around sides to height of about 13/4 ".

For the filling, in a large mixer bowl, bear together the softenend cream cheese, remaing leon peel and remaing vanilla till fluffy. STir together the sugar, the flour and the salt, gradually stir into the creamed mixture. Add the eggs and egg yolk all at once, beating at low speed just till combined. Stir in milk. Turn into crust line pan . Bake at 450' for 10 minutes. Reduce heat to 300' , bake for 50-55 minutes. or till center appears set and a knife inserted comes out clean. cool for 15 minutes. Loosen sides fo cheesecake pan with spatula. Cool 30 minutes; removes sides of pan. Cool about 2 hours longer. Chill thoroughly. Top with cherry sauce. Serves 12
