My 14 year old daughter who is mentally handicapped is in a regular ed home ec class. She has to do a presentation of a favorite recipe with at least 4 ingredients. I don't know if she can handle a mixer without me there... but she wants to make cookies. Any suggestions? Even if it isn't cookies, I'll take suggestions for something easy and fun.

Y dont you try out some fruit or vegetable salad?
If fruit salad, you will need grapes, mango or any other variety of fruits, added with some custard or condensed milk or full cream milk n sugar........

If it is vegiee...
have vegetables like tomato, cucumber, capsicum, onion, carrot, baked corn, or even baked bean(if you wud like it) with curd or cream. Ad salt, pepper or chily powder with chat masala........

garnish with coriander leaves.......... hav fun

D is for Daddy hit on a good choice. But my Rice Crispie Treats has 4 ingredients in it so it would qualify.

RICE CRISPIE TREATS

5 cups rice crispies
1 (7 oz) container marshmallow creme
1/2 cube of butter (1/4 cup)
1 tsp vanilla

Place the 5 cups of rice crispies in a large bowl. Place the butter in a pan and turn on the stove to medium. As soon as the butter is totally melted, add the marshmallow creme and mix until they are totally combined and the marshmallow creme has melted. Add the vanilla, stir, and then pour the mixture over the rice crispies. Stir the mixture well and pour into a cake pan that you have lined with aluminum foil. Smooth it out until the top is flat. Let cool. When it's cool, cut it into squares.

She could practice at home and bring in the ones already made and cut for each person to enjoy. Then she wouldn't have to wait for them to cool in the pan even though it won't take long. She won't need to use any equipment other than the stovetop so she should feel more secure.

On Food Network's website, you can search by show or chef. Rachel Ray has a show called 30-Minute Recipes, so you can look at her recipes (and her blog) or the show, with recent episodes & recipes listed. Even though you probably want main dishes, this is a great pie, that's super easy to make, and not very expensive. You just mix it in the blender, pour and bake, and it magically forms it's one crust while it bakes IMPOSSIBLE COCONUT PIE 4 eggs 6 TB soft butter or margarine 1/2 c. flour dash of salt 2/3 c. sugar 1 c. flaked coconut 1 tsp vanilla 2 c. milk Put all ingredients into the blender and blend for 10-15 sec (make sure you scrape the sides). Pour into greased & floured 9" or 10" pie pan. Bake at 350 for 1 hour. Good just plain, or with whipped cream or ice cream on top

What is her favorite dish, is it dessert or a vegetable.
Adapt her favorite food into something she can make on her own. It will teach her a skill that she will need in a a few years, and she will be very proud to make it for you when ever you wish.

Here is a quick cookie recipe that she may be able to accomplish on her own with out the mixer.

Easy coconut macaroons.

3 cups shredded coconut
1 cup sweetened condensed milk
1/8 teaspoon salt
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
PREPARATION:
Generously grease baking sheets. Combine all ingredients; stir until well blended. Drop by teaspoonfuls, 1 inch apart, on prepared baking sheets. Press down with the back of spoon to even thickness. Bake at 350° for 15 minutes, or until macaroons are golden brown.
Cool 5 minutes; remove from baking sheet.
Makes about 36 coconut macaroons.

My Grandmothers French toast
4 eggs
2/3 cup of milk
1/8 cup white sugar
1/8 cup light brown sugar
1 teaspoon if cinnamon
1 loaf of bread
non stick spray for the skillet or grill

mix all the ingredients except the bread together in a baking dish or bowl.
spray and pre heat the skillet or flat grill.
Dip sliced bread in the egg mixture coating both sides.
place on the grill and cook till golden brown flip and grill the other side serve .
Note: Because of the sugar in the batter most people do not use syrup on it.

That could proove challenging. I do make this recipe that's not my favorite, but I don't like chocolate, and my dad loves the sweet and salty.

In a bowl microwave 1 1/2 c. each butterscotch chips and chocolate chips. Stir occasionally. Then add in 1 1/2 c. chopped salted cashews and 1 c. of chinese noodles. Get the thin ones in the chan. I think that are chow mein noodles.

Put spoonfulls of them on a cookie tray lined with wax paper. IIt takes them about 20 minutes to set up.

Pre-heat oven to 350

1 yellow or white cake mix
2 eggs
1/3 cup oil
1 cup chocolate chips

Mix together first three ingredients then add chips.
Roll into a balls and place on cookie sheet.
Bake for 9 to 12 minutes
These are easy and yummy.

My Snowball Cookies! :)

2 1/4 cup flour
1 cup softened butter (sweet cream butter)
3/4 cups chopped walnuts
a couple of overflowing handfuls of shredded coconut
2 teaspoons of vanilla extract
powdered sugar

mix ingredients with love - don't need a mixer :) chill dough in the refrigerator, then roll into tiny balls. place balls on an ungreased cookie sheet @ 400 deg F until they are set (and not golden). remove from oven and roll in powdered sugar while still warm. set aside and allow to cool, and then roll once more in the powdered sugar. VOILA!

I made this in home ec when I was in middle school (minus the raisins & walnuts). I was really easy & tasty.

Monkey Bread

Prep Time: 25 min ; Start to Finish: 1 hr 5 min
Makes: 12 servings Nutrition Information

1/2 cup sugar
1 teaspoon cinnamon
2 cans (16.3 oz each) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits
1/2 cup chopped walnuts, if desired
1/2 cup raisins, if desired
1 cup firmly packed brown sugar
3/4 cup butter or margarine, melted


1 . Heat oven to 350°F. Lightly grease 12-cup fluted tube pan.
2 . In large plastic food-storage bag, mix sugar and cinnamon. Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts and raisins among the biscuit pieces.
3 . Mix brown sugar and butter; pour over biscuit pieces.
4 . Bake 28 to 32 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.

What if she has chewy chocolate cookies that are already baked, coconut-pecan frosting (AKA German Chocolate), chocolate buttercream, and vanilla ice cream. She can frost the underside of each cookie with the frostings then assemble: one cookie with butter cream and one with coconut-pecan with a scoop of ice cream in between. Put in the freezer for a few hours to set and it is very delicious. (Gourmet ice cream sandwiches.)

Sorry if this is over-simplified. You mentioned she is handicapped, so I didn't know if she would get nervous about measuring in front of others or should stay away from heat (such as with rice crispie treats - my first thought). And these are VERY yummy ... can try different cookies/frosting, but make sure you use very soft, chewy cookies.

A pudding pie

Use instant pudding
A Gram cracker crust
Add cool whip to the top
Then top with small candies (chocolate chips, cherry chips, etc.)

4 ingredients
Pudding (pudding and milk)
Graham crust
Cool whip
Candy on top

Grandma's Salad
1 container of cottage cheese
1 tub cool whip
1 box of jello (you want it dry)
1 bag color marshmallows

Mix all together in a bowl and your done. Very yummy and very simple!
