Sean Gannon who also fought Kimbo Slice but I don't know how old either of them were. It is on the front page of Sherdog today so I guess that's what brought about this question. But, you answered your own question.
I think the oldest person to participate in the UFC was Ron Van Clief, UFC 4. His age isn't listed but he looked over 50 at that time. Oddly enough he became the UFC President/Commissioner at UFC 5.
