what you decide to bring is really your choice...what is your special dish or dessert? that is what i think you should bring to the potluck.

OK, so it is pot luck. Who said you only had to bring one dish. What are you best at cooking? What are your family's favorite foods, where will the party be held, etc are all questions you must answer before you can choose your dish or dishes.
Personally I take both a main dish and either a dessert or a side dish. If this is for the winter you can do a casserole that would include protein and starch. A good one is a takeoff on a Reuben sandwich with mashed potatoes, sauerkraut, and corned beef. Then bake a pan of brownies, everyone loves brownies.

It's November and Fall! Bring a dinner in a pumpkin! Hearty, delicious and a sure hit!
1 small-med pumpkin
1 chopped onion
2 Tb oil
1 1/2 lb ground beef
2Tb soy sauce
2 Tb brown sugar
4oz can of sliced mushrooms
1 10 can of crm of chicken sooup
1 1 /2 c cooked rice
Cut top off of pumpkin and thoroughly clean out seeds and pulp. Preheat oven to 350, meanwhile brown beef with onion add sugar, soy, mush, and soup. Simmer 10 mins. Add cooked rice and spoon into pumpkin and place entire thing in oven on baking sheet. Bake about an hour. Serve scooping out some pumpkin as you scoop out the delicious dinner.
I've made this, and it is yummy, holds together well, stays warm, and looks awesome.

Shredded BBQ Subs (this serves 8 and can easily be doubled. Make another 1/2 recipe sauce, and roast two shoulders instead of one.) Preheat oven to 300 (for 7 hours) or 350 (for four hour cooking time) 1 small onion, finely chopped 1 boneless pork shoulder roast 1 bottle good BBQ sauce 1/2 c. water 1/4 c. honey 4 cloves garlic, minced 1 tsp. seasoned salt 1 tsp. ground ginger or 1 Tbs. minced fresh ginger Place onion and roast in roasting pan with lid. In a small bowl, combine rest of ingredients; pour roast and cover tightly w/ foil, then roaster lid. Roast for time specified above (that's the nice thing; you can put this on in the morning and it will be ready at dinnertime, basically, or you can cut the time down if you'll be home.) Let cool, and shred meat with two forks, mixing with sauce. If it seems dry, add a little more bottled bbq sauce. Serve on buns. A great and easy side is a bowl of coleslaw - people can eat it on their sandwiches or on the side.

I would make a main dish. Most people make a side dish or dessert. If time is an issue for you. You can get one of those Stoffures Lasagna dinners they are wonderful and people young and old appreciate it.

How about an appetizer? People love grazing on little bits of food, it gets them hungry for the big stuff. I personally love a deli platter with different meats and cheeses. You could bring crackers or small pieces of breads, olives, little tomatoes along with it. People will adore it.
