I teach K and have been making a snack for the kids (or we have been cooking it!) at the end of the week for whatever letter we have been working on. (A = apples, B= bagels with butter, C= cookies, D=Donuts, etc). I cannot think of anything for E. I have to pay for it and prepare it, so I dont really want to make eggs or eclairs. Any ideas?!

I like the thought of English Muffins because the kids would also like them. You could toast them in your broiler at home and rebag them after they're cool. Freeze them if you want to do them earlier than the night before. No need to butter them or anything. When it's time for the treats, the kids could spread jam on them or you could have Edam cheese for the letter theme.

How about Easter eggs.... for something simple try hard boiling and coloring eggs OR get chocolate Cadbury eggs to hand out.

There's always endive or escarole... make a salad or make some kind of dip and use the endive as the dipper.

Get some edamame and cook it or serve it raw

Buy or make egg nog using pasteurized eggs...very season appropriate

Cook some elbow macaroni and add Edam cheese to make mac & cheese

Or the easy way would be to bring in unshelled English walnuts (although some of your students may have nut allergies) and let them crack them.

Sounds like a cool idea... very creative.

English Muffin Broil

2 C. grated cheddar
1 C. mayonnaise
1 C. Each: black olives and green olives
1 ( 8 oz) pkg English muffins

Mix all ingredients. Broil until bubbly. This makes 16 halves

You can make the mixture ahead of time and store in the frig.

You can tempura it or bake it i am sure if you look around on some sites there are kid friendly or kid tested eggplant recipes.
