I've successfully used a piece of clean, white T shirt to substitute for cheese cloth. Works great.

My recipe calls for putting the rice vinegar and sugar in the rice as soon as it is done--then stir with the paddle and fan in a shallow bowl until all sugar and vinegar has been used.

If you are not going to use it right away, a moistened paper towel works well.

Using pieces of clothing can impart a detergent or dryer sheet smell to the rice.

Gee, all I make is sticky rice. I've never used anything to make it except water and rice. What am I missing?
