something easy to make, i am looking for ideas for lunch to take to work?

Be creative and make up your own. I do all the time. Start with any good beef, chcken, pork or vegetable stock and add all the things you like. To make them diet wise cook any meats and stock first and refridgerator them until cold and the fat settles on the top. Then skim all that fat off and reheat the stock and add your vegggies,etc. Pick any spices since calories are not usually in those but hold back on the sodium since too much of that raises blood pressure and retains water in your body. Use lowfat or fatfree butters and milk for cream soups and even lowfat cheeses for an added flavor. If you want thick soups then take about 1/3 of your soup mixture and blend it in the blender until it is liquid and place it back into the rest of the pot and it will thicken up the soup without any flour or cornstarch thickening. I never use a recipe. I use any leftovers or fresh, frozen or canned veggies and onions that are in my house and refridgerator. You can use chopped canned tomatoes also as a sauce and that is good mixed with any meats and meat broths. Wild rice is also great. Skimp on noodles and macarronies though since they are made with flour and that is what turns to starch and gets you chubby. Hope that helps. If you want them for luches, then use some ziplock freezer bags and freeze some from each recipe you make. Date them and you can just pull them out the night before you go to work. I do that for my husband. I freeze portion sizes of everything I make for his lunches. Then he can pick what he wants.

You are gaining weight because alot of Sodium causes water rentention and hence you gain more weight. To combat this you need to drink a whole lot of water. "If you eat a really salty meal, you may notice that your body will experience some swelling. This swelling is retained water which is being kept by the body in order to keep the salt in solution. So how do you get rid of retained water? Well, believe it or not, the answer is that you drink water to get rid of water! That's right. It's counterintuitive, but true. By drinking extra water, it will allow your body to "flush" the excess salt out and to release the retained water." So you need to balance the salt(Sodium) intake with the water to avoid the body trying to hang onto water to dilute the salt.

Vegetable. To either beef broth or chicken broth, add sliced onions, celery and carrots. Season with pepper and garlic powder. Simmer till vegies are tender. Very easy - start to finish is less than 30 minutes (that includes the slicing).
