It's oil made from corn. You cna also use vegetable oil, canola oil or safflower oil. Do not use olive oil unless otherwise stated as it has a flavor all its own. Especially do not use it in baking.

margarit had the right answer -- you can substitute generic "vegetable oil', safflower, sunflower, etc. Peanut oil is particularly good in high-temp cooking. I personally hate canola oil so you may want to pass on that.

Do not substitute olive oil or animal fats (butter, etc.) for corn oil. They have their place (I always have one bottle of good and one bottle of great olive oil around the house) but there are many dishes that would just taste strange if you substitute olive oil for corn oil. Plus as whatabo points out the temp at which they burn is different.

Corn oil is made out of corn. There are many replacements, depending on the recipe. Here is a list of a few oils:

Olive oil : good for roasting vegetabels and sauteing, although is has a low flash point (the tempertaure at which oil will igninte) and is not good for frying.

Seasame oil: good for stir-frys

Rice oil: good for sauting and stir-frys. Has a high flash point.

Canola: same as above

Peanut oil: Best for wok stir-frying: Extremely high flash point.

Clarified butter: Made by melting butter and scraping off the foam on top. Ladle the clear butter oil into sepertate container and discard sediment of bottom. Much higher flash point then regular melted butter. Good for sauteing.

Corn oil is from corn. You can use just about any oil in it's place. Not Olive oil. It burns at a lower temp.

You can pretty much interchange corn oil with any other cooking oil. Vegetable oil would be a good substitute. It is quite similar to that, maybe a bit healthier...
