You don't say where you buy it, but I'm guessing the place you buy it doesn't do their own baking so it's already "day old" by the time you buy it and may have been exposed to higher temperatures transporting it to the store as well. Look for a local bakery or bake your own (frozen loaves if you don't want to make from scratch).

we dont buy our bread anymore. we make it with our bread maker and its GREAT!
