Yes, you can use the game hen. That is only enough meat for 1, or maybe 2 people with light appetites. For dumplings, I make a basic biscuit recipe. My Grandma taught me how to make chicken & dumplings. First, get a large stock pot. Place a whole chicken in there WITHOUT CUTTING IT UP, add enough water to completely cover the chicken. Bring to a boil on high heat. Lower to medium heat. Cover with tilted lid to let steam escape, simmer until chicken comes off the bones. Let cool, skim the fat off the top, remove all the bones. Set aside. In large bowl, put 2 to 4 cups of all purpose flour, depending on how many you are feeding. Use at least 1/2 cup cooking oil, & enough mik to make a soft dough. Turn out on floured surface, & knead slightly. Using a rolling pin or old wine bottle, (drink wine first) roll out to 1/4 inch thickness. Cut dough into 1 inch wide long strips. Place chicken pot on burner. Make sure there is enough stock, if you have to, you can add water & a chicken bouillon cube or two. After it comes back to a gentle, rolling boil, take one strip of dough at a time, & pinch off dough pieces about the size of your tumb, dump 1 AT A TIME into the pot. Make sure each dumpling is covered with the liquid after you dump it in. Keep putting dumplings in, without overloading the pot. Let them cook for at least 20 minutes, usually longer. This does take a lot of time, & effort. But, it's worth it. After 40 plus years of cooking, I have never had a complaint. OR LEFTOVERS! If this is too complicated for you, you can also buy those biscuit in a can things at the store & substitute them for the scratch dumplings. Good Luck & Blessings

Put a big pot of water on the stove to boil. Now put your chicken in. Add some salt, pepper and garlic powder to your pot. When the chicken is cooked (you can tell when it falls off the bone or you put a fork in it and it starts to fall apart) remove it from the pot and take the fat and all bones out. Put it back into the pot. Now take a package of biscuits that you get in the fridge section at the store. Cut the raw biscuits into 4 pieces. Put them into the chicken soup mix on the stove. Let it simmer. The biscuits will cook up and thicken the soup. You can add carrots and onion if you like. Enjoy.

You could just boil the bird. Then when it done remove the skin and bones (Be careful it hot). I use two forks to take the meat off the bone. Add the meat back to the water/broth. Then take some scissors and cut some Flour Tortillas into 2-3inch strips and throw in the broth with the meat. You can add about a teaspoon of flour to thicken up the water. Maybe a little salt and pepper. Make some corn bread and maybe a can of green beans.

1get a large pan and fill it half way with water
2 cut the chicken up and put it in the water
3add 1 onion and 2 ribs of celery washed and chopped
4simmer all of this for 1 hour on a medium boil
when the meat is done remove it and let it cool off
5mix 2 cups bisquick with milk untill its a stiff dough in a bowl
6 dip a teaspoon into the hot broth then scoop dough into the spoon and dip it into the broth and sort of wiggle it untill the dumpling falls off,continue untill the pot is filled and simmer with the lid on for about 7 minutes ,,continue this untill all of the dough is used and remove as they are done
7 take one out and try it

Start by cutting the chicken up. Cut off the legs and thighs, then halve it and cut off the wings. Put in large pot with about 4 cups of water, add celery and carrots. cook until done......

Boil the chicken till done and them add the dumplings and cook till they are done. The easiest thing to make dumplings and , no one will know, is used can biscuits, pull apart into small pieces and drop them in. Add your flavorings, salt and pepper..........xx

Along with baby carrots, celery and onion, I always add a handful of frozen peas (towards the end of the cooking cycle). The more veggies the merrier I always say! They don't really add much flavor, but make it more appealing to the eye.

I know of a simple way to make dumplings and they are good..use the burrito wraps and cut into squares into however you make them instead of making dough..They taste just as good and are easier...
