The best soy sauce is not a brand but a type, and that is Tamari sauce. You can find it on the web. It's always aged at least two years in wooden casks, and the longer you keep it the better it gets.

No they are not. I lived in Phan Thiet, Vietnam for a couple of years, which is the fish sauce capital of the world, and I have seen them make nouc mam (not sure of the spelling but that is how they say Fish Sauce). Anyway they take a bunch of small fish and put it into these large clay jars and they let it rot for a few weeks--yeah it smells like nouc mam. Soy sauce is made from a soy bean. I happen to like them both, but they are not the same

As the saying goes, there's no accounting for taste. You'll have to do your research. Look for brands that state that they've been aged at least one year. There's a highly rated one that I'm trying to locate again on the internet. It's only available in China or by mail order. The prices I had seen were listed as EU currency. The deal though with this brand is that it is fermented for at least three years in ceramic casks that are hundreds of years old, which means they are well seasoned. I regret not writing the name down the first time I found it. Many brands that you see in the U.S., such as Kikkoman, are industrial processed, which means they are force-fermented in a few days. using chemicals. Other than that, look for organic. You don't want GMO soy beans.

Kikoman is the standard in many kitchens and restaurants. However I LOVE KIMLAN!!! It is truly the best soy sauce I have ever had, and before I never thought there was a discernible difference. It has great flavor, and not too salty. I find it by the sushi section of my grocery store or the Asian foods section.

I prefer Kikoman. The low sodium is best for health issues other than that, it's a matter of taste.
