Cinnamon sticks are used in spice tea which is really good over the holidays. Here is the recipe.
Combine in a large pot on the stove.
1 can of pineapple juice
2 12oz. orange juice frozen concentrate
1 12oz. can of frozen lemonade
1 12oz. of frozen grape juice
4 family size tea bags in 4 cups of water
Steep 5 crystallized ginger slices and 5 cinnamon sticks in 12oz. of water. Add it to the other ingredients. Repeat three or four times using your original ginger and cinnamon.

You stirr your coffee with them, and if it has enough cinnamon flavor (you'll probably need to add sugar, because cinnamon isn't sweet), you just lay it to the side.
Mexican chocolate (cocoa) is made with cinnamon. You just break off a piece of the chocolate and melt it with milk on the stove, and then whip it up well.
You can grind cinnamon, especially if you want to cook goodies with it, but it must be ground until very fine or you'll have little rocks in your cookies.
My mother used to make a yarn braid, and at a point in the braid, she'd hang a cinnamon stick then do the same at the next like point. It made our whole kitchen smell like snickerdoodles (if you've never made these cookies, do so now. A great Thanksgiving treat!!).
One more little story and I'll let you go. Back 20 years ago, when we had guests over to the house, we'd make wassail--a hot cider/citrus drink special for Christmas. We'd drop a couple of cinnamon sticks in there, and it would give the apple cider and Tang (powdered orange juice) a spicy flavor.

If you want a really strong cinnamon taste I suppose you could grind them up, but I usually just leave them in the coffee and let them dissolve slowly. Not quite as overpowering that way.

You can grind them in the coffee grinder if you like. or just place the stick in the hot coffe and allow it to stew for a bit to infuse the flavour.

I put mine in Indian meat dishes and some vegetarian dishes too. I grind them finely and mx with sugar and put them on bread and grill them and I grind them finely and strain them for coffee.

You can boil them in water and it is a very tatsy add sugar to tase really good. U can also add a little brandy to taste for a very nice warm winter drink. Actually my favorite in the cold winter months
