I have a 1993 GMC Sonoma pickup. It has a two headlight system. What is the best way to aim them yourself? would it be better to take it to a shop? Would a body shop be able to do it?

Every time I tried doing this against a wall I could not do a good job. I suggest you do it on a level road, when it's dark at night, use a flash light to see what you are adjusting then point the lights so the beam hits the road about 40 to 50' ahead of you... compare with other cars if unsure.
The left beam should be pointed to 40' ahead and center of car, the right beam should be more like 50' and pointed to the curb (if you are stopped with wheels next to curb).

Find a level area with a wall that you can point you car at from about 30-40ft. Once it gets dark turn your lights on. The should be no higher on the wall than your headlights are on your car. Most cars have a single screw per headlight to adjust them. Open the hood and take a close look above the lights. You could also look around the lenses, some GMs have the screws in the front next to the light.

both guys above me are right, I'd just like to add the left headlamp should be aimed slightly lower than the right one; the light cut-off line some 8-10 inches lower.
this prevents blinding the driver on the opposite side of the road.
