Here are some ideas for your rice:

Sautee 1 each diced: mild yellow onion, red pepper, green pepper, yellow pepper.
You could:
Add to taste chopped fresh garlic and ginger. Add cooked beans.
You could:
Add cayenne pepper and a good quality maple syrup to taste.
You could:
Add tamari soy sauce to taste and cook at a very low heat to allow all the flavors to blend - approximately 15 minutes.
You could:
Add grated cheese (a good mild white cheddar or mozzarella are excellent), bake until cheese melts.

Maybe not this time, but next. this is wonderful! This recipe is easy to make, and does not take very long to prepare.

Picardy Rice
Serves 4-6

4 streaky bacon slices, diced
I oz. [2 tablespoons] butter
2 shallots, finely chopped
2 small green peppers, white pith removed, seeded and cut into julienne strips
2 medium-sized tomatoes, blanched, peeled and chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
12 oz. [2 cups] long-grain rice, washed, soaked in cold water for 30 minutes and drained
I pint [2 1/2 cups] hot chicken or stock
1 lb. lean cooked chicken, cut into strips
In a flameproof casserole, fry the bacon over moderate heat for 5 minutes or until it is crisp and has rendered most of its fat. Scrape the bottom of the casserole frequently with a wooden spoon to prevent the bacon from sticking. With a slotted spoon, remove the bacon from the casserole and drain it on kitchen paper towels. Set aside. Add the butter to the casserole. When the foam subsides, add the shallots and green peppers and fry, stirring frequently, for 3 to 4 minutes or until the shallots are soft and translucent but not brown. Stir in the tomatoes, salt, pepper and thyme. Add the rice and stir well to coat the grains. Pour in the stock and bring to the boil, stirring occasionally. Reduce the heat to low and simmer stirring occasionally, for 15 to 20 minutes. Stir in the chicken and simmer for a further 5 minutes, or until the rice is cooked and tender and has absorbed the cooking liquid. Remove the casserole from the heat and spoon the rice mixture into a large warmed serving dish. Sprinkle over the fried bacon and serve immediately.

A small can of plain old Cambells onion soup substituted for some of the water you use while preparing the rice plus a half block of butter or margarine. I don't how you make rice. Some people use a rice cooker but a pot with a cover is all you need. The standard recipe is twice as much water as (washed) rice brought up to a boil, cover, cook on low for 20 minutes. When measuring the ingredients substitute the onion soup for all or some of the water and add the butter. It makes a delicious dish called onion rice and it's very tasty.

I have heard of cooking rice in chicken broth instead of water. It takes on the taste of the broth for a little different taste. It might be a good combination with the garlic chicken.

Have fun!

I put some salsa in plain white rice once and it livened it up considerably. After I cooked it of course.

Well you can add soy sauce when you put it on your plate. Or just make plain white rice that is always good.
