I like mine with tomato and onion, fresh cilantro and green tomatillo salsa.

The way to eat a taco, without breaking into a million messy bits, is to "butter" a soft tortillia with refried beans and adhere that around the whole taco, then fill it and eat. The soft tortilla holds it all together! yummo!

Sauces for tacos are usually hot: red sauce, green sauce, mole, pico de gallo; sometimes I like to put some heavy cream instead of sauce, especially on flautas.

Pile on the veggies and salsa. Don't forget the sour cream and cheese. I like it when the toppings are in separate bowls so people can garnish their own tacos.
