Potato croquettes
Makes 6 to 8 servings
3 to 4 pounds red potatoes
1 cup finely chopped onions
½ cup finely chopped green bell peppers
3 eggs, beaten
Salt and black pepper to taste
Several dashes hot sauce
All-purpose flour for dredging
Vegetable oil for deep-frying
Boil the potatoes in lots of water until they are fork tender. Remove from the heat, cool and peel.
In a large bowl, mash the potatoes, leaving some lumps. Add the onions, bell peppers, seasonings and eggs. With your hands, shape the mixture into balls, about 2 inches in diameter, or if you prefer, shape into 3-inch pancakes.
Dredge the balls or pancakes in flour and drop them into hot oil. Fry until golden brown. Drain on paper towels and serve hot.
Easy Chicken Stir-Fry
2 tsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
3 cups frozen stir-fry vegetables, thawed
1/4 cup GOOD SEASONS Asian Sesame with Ginger Dressing or Italian Dressing
2 Tbsp. soy sauce
1 Tbsp. honey
1/4 cup chopped Peanuts (opitional)
4 cups hot cooked instant white rice
HEAT oil in large skillet on medium-high heat. Add chicken; cook and stir 7 min. or until no longer pink.
ADD vegetables, dressing, soy sauce and honey; mix well. Cook an additional 2 min. or until heated through. Sprinkle with peanuts.
SERVE over the rice.
Tortilla Soup
2 tablespoons Pure Wesson Vegetable Oil
1 large onion, chopped (1 large = 1 cup)
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
2 cloves garlic, finely chopped
3 cans (14 oz each) chicken broth
1 can (14.5 oz each) Hunt's Petite Diced Tomatoes with Mild Green Chilies, undrained
2 cups shredded cooked chicken
1 cup whole kernel corn
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 cups tortilla chips, broken (2 cups = 4 oz)
Shredded Cheddar cheese, sliced green onions, cilantro sprigs and diced avocado, optional
Heat oil in large saucepan over medium-high heat 1 minute. Add onions, bell peppers and garlic; cook 5 minutes, or until vegetables are crisp-tender, stirring frequently.
Add broth and tomatoes with their liquid. Bring to a boil; reduce heat to low. Stir in chicken, corn, cumin, salt and pepper. Simmer, uncovered, 10 minutes.
Ladle hot soup into serving bowls. Top with tortilla chips. Add cheese, onions, cilantro and avocado, if desired.
Breakfast "One Panner"
I diced potatoes very fine, about 1/2 inch by 1/2 inch with onions and fried them, then when they were almost ready I put in a pound of sausage and fried it all together, then I beat some eggs and put in after the sausage had cooked then sprinkled on some cheese. It turned out great. I served it with biscuits and gravy. There was almost no mess because almost everything was made in the same skillet.

Lean Ground Beef & ** Mushroom Fried Rice
Seasoning Salt, 1 tsp
Onions, raw, 1 medium (2-1/2" dia)
Mushrooms, fresh, 1 cup, pieces or slices
Mixed Vegetables, Broccoli Carrots Mix, , 2 cups
Soy Sauce, 2 tbsp
Beef Broth, 1.5 cups
Lean Ground Beef, 12 oz
Dry Rice, 1.5 cup
Cooking Spray
1. Chop onion and mushrooms to desired length.
2. In a large skillet cook lean beef until brown, add seasoning to taste. Drain if needed.
3. Add onion and mushrooms to beef mixture, cook until onions are translucent. Set aside.
4. Spray the bottom of the pan with butter flavored cooking spray.
5. Brown the rice until a golden color.
6. Add meat mixture to the pan, stir.
7. Add Veggies, stir,
8. Add broth.
9. Bring the stove to simmer setting, Cover.
10. Let cook until rice is tender.
**You could leave out the Mushrooms if you did not have them.

2 c. elbow macaroni
1 can tomato soup
Salt and pepper to taste
3 strips bacon, sliced
10 oz. pkg. frozen mixed vegetables
8 oz. can tomato sauce
3 c. water, more if needed
Brown ground beef and bacon in skillet. Add onions, cook until tender, add all ingredients and cook for 15 minutes, stirring often. Then serve.
