My boyfriend and I are very picky eaters. we do love chilli though! I used to have a good chilli recipe and I guess i lost it somewhere down the line. We arent onion or pepper fans... so, does anyone have any ideas?

This recipe may be too complicated or long for you, but here it is anyway. I do use onions & green bell peppers, plus dried hot red peppers. You can omit these if you like, but it won't taste as good, & you can also substitute the ingredients if you want to suit your tastes. Take 2 cups dried cranberry beans (kind of a red pinto), soak overnight in 8 cups of water. Next morning, drain them. Put into stock pot, add water until it covers the beans at 2 inches. Cook on medium heat until done. Sometimes I add chipotle peppers at this point, depends on who I'm cooking for. In a large (wok size) fry pan, cook 1 large red chopped onion in extra virgin olive oil until onion is clear. Add diced fresh garlic (amount varies - go by your tastes), DO NOT LET GARLIC BROWN, add 1 large diced green bell pepper, if you like you can add dried chipotle peppers at this point. Add 2 lbs. ground meat ( I always use a mixture of ground chicken, or turkey, & 1 lb. of ground buffalo - lean meat cuts calories). Cook until the pink in the meat is gone. In a large pot, ( I use a Dutch oven) place the meat mixture. Add 1 can of Roetel, 1 can of plain diced tomatos, 1 can of tomato sauce. After this cooks awhile, I add more tomato sauce, use your own judgement. Cook slowly for 2 hours. Add the drained beans when the chili is thick enough to suit you. Don't cook for long after adding beans. They can stick to the bottom of the pan. As for seasoning, I use cumin - by taste, jerk seasoning - by taste, chili powder - by taste. This does take awhile. But everybody loves it, & there is NEVER any leftovers. Good luck & Blessings

Scotch Bonnet Chilli I love, adore and need the addictive burning that only a Chilli pepper can produce. I have finally hit upon my favourite recipe, please bear in mind this is for serious aficionados only. Ingredients: 500 gr Minced/Ground Beef 10 to 15 Fresh Scotch Bonnet/Habenero Chillies 6 Tablespoons of Hot Chilli powder 2 Cans of Premium chopped Tomatoes 1 Can Red Kidney Beans 4 Tablespoons Tomato Ketchup (adds sugar) 2 Good sized Onions 1 chopped, 1 Finely sliced 6 Cloves of Garlic roughly chopped and crushed 1 teaspoon Cumin powder 1 Pint Water Oil Butter Salt and Pepper to taste Soured Cream Grated Cheddar/Parmesan Cheese Method: In a large pan, warm enough oil to cover the base. Add Chilli powder and stir for 2 minutes, add onions and finely chopped chillies, stir for 4 minutes until soft and onions begin to colour, add garlic, Cumin and Beef. Continue to cook on a low heat for 10 minutes. Add the Tomatoes and drained Kidney Beans, gently simmer for 60 minutes adding water to desired thickness. Add a knob of butter and season to taste. Simple but very effective, if you like it HOT! Sprinkle with large amounts of the Cheese.
