I've seen that stuff in the body cavity where you reach in the "part goes over the fence last" or it's packed under the neck flap.

My first inclination would be to check and pull it out the backside, but I would next check under the neck flap in the front to make sure no other "hidden" packages are in your turkey.

In other words, check both ends.

They are in a bag and put into the cavity of the turkey, you reach in the "butt" end to take them out. Giblets basically consist of the "innards" like the heart, gizzard, liver, etc... which come from different parts of the bird.
