I made some Roman homebrew using pears raisins and sugar back in the summer. I have these pear trees in the back.
I just today bottled it. I tried some of it and I gotta tell you it is kicking!! I used 5 pounds of sugar. About 20 pounds of pears and a pound of raisins. This is traditional pear wine made by the romans back in biblical days. The recipe says to bottle it up and wait for a year before drinking it. I gotta tell ya it is pretty darn good right now. Would it be ok to drink it now other than wait a year?

It won't do any harm but if you leave it the wine will continue to ferment and mature and be a lot smoother in a year's time. Why not drink some now and put a couple of bottles away for next Christmas?

Sounds like you can do both drink some now and record in a diary what you think of it.

Drink some later and compare your notes. You have a good opportunity to answer the question yourself.

why wait???if it tastes good,drink it...maybe if you wait 1 yr it won't taste as good as it does now...
