i have some lump crab meat and im want to make an easy sort of crabcake

Hush Puppies:
1 1/2 cups yellow cornmeal
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
Fresh ground pepper
1 teaspoons hot sauce
1/4 cup minced onions
2 cloves of garlic, minced
2 eggs, beaten
1/2 cup milk
1 to 2 cups shredded crab meat, drained if using canned meat

Preheat the fryer. In a mixing bowl, combine the cornmeal, flour, baking powder, salt, hot sauce, onions, and garlic, together. Stir in the eggs and milk. Add crab meat. Mix until fully incorporated. Fry 1 tablespoon of the batter at a time. Fry the hush puppies for 2 to 3 minutes or until they are golden brown. Stirring constantly will ensure over-all browning. Remove from the oil and drain on a paper-lined plate.

1/2 cup flour, sifted
1 1/2 cups white cornmeal
2 teaspoons baking powder
3/4 cup milk
1 tablespoon sugar
1/2 teaspoon salt
1 small onion, chopped fine
1 egg, beaten

Combine all ingredients. Drop into hot oil, 1 teaspoon at a time, until golden brown. Serve while hot with fish.
Serving Size: 4


2 c. hush puppy corn meal mix
1 lg. onion, finely chopped
2 eggs
1 tbsp. sugar
Milk
1 (6 1/2 oz.) can crab meat (can use water-packed tuna or shrimp in a pinch)

Mix all ingredients; add just enough milk to make a stiff batter. Have corn oil (or peanut oil) in deep fryer hot. Roll mixture into balls and fry until golden brown. Watch carefully that it doesn't get too brown.
