I get some bread - usually some leftover white or wheat, or even hotdog or hamburger rolls. (6-8 slices of bread for every 3 people) Tear them up and let them sit in a bowl for a couple of hours to dry up.
Slice two stalks of celery, one large onion and add them to the dried bread. (again do this to taste - I like lots of vegetables in my stuffing) and toss with at least a tablespoon of poultry seasoning. Moisten with chicken or turkey broth until it feels gloppy, and then bake it in a 350-400 degree oven for 20-30 minutes until it's browned and the top is crunchy.

It's very easy. Just saute an onion, a couple of celery stalks (chopped) and some sliced mushrooms in butter. Season with salt and pepper, and some dried sage. Add your bread cubes, and stuff the turkey. If the stuffing is a little dry, you can add some chicken broth. Good luck!

Corn Bread Stuffing
Make the corn bread first:
Cornbread:
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil
Preheat oven to 350 degrees F.
Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
7 slices oven-dried white bread
1 sleeve saltine crackers
8 tablespoons butter
2 cups celery, chopped
1 large onion, chopped
2 cloves of minced garlic
7 cups chicken stock (use stock, not broth)
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage
1 tablespoon poultry seasoning
5 eggs, beaten
Preheat oven to 350 degrees F.
In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside.
Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 minutes. Serve with turkey as a side dish.
This is the only stuffing my picky nephews will eat.

I bought two boxes of turkey stuffing at Wal-Mart yesterday to make at home on turkey day. But, I'm with you on this one. I'm just answering so I can see the other answers and maybe make some too.

My dad makes the stuffing some times my favorite was Italian Sweet Sausage in the stuffing, it was great!
