The best time is as they are returning to spawn. This is when they are at their prime in size and weight. Seasons will vary and there are fall and spring runs. The Ocean run Salmon are the best eating. They are a bright silver color and the flesh is a nice deep pinkish red and full of the natural oils. When caught in a river they should be taken early in the season, as the longer they remain in the fresh water, and the closer they get to the actual spawning ground, their color darkens and the meat gets a brown tint, not good table quality. Check with your local fish and game dept. for fishing seasons, they vary from year to year and will sometimes depend on the actual number of fish determined to be available.

Probably the easiest to catch just when they're preparing to swim upstream to spawn. At this point they're trying to pack in the food, since they don't eat much once they're traveling upstream, and they're gathering near the river mouth, so you know where to find them. (The season for this depends on the type of salmon.) Once they get up to the spawning grounds, they're done, ready to drop their eggs and die.

When you can get them in the open ocean, they're in their prime, and better eating, but as they can range hundreds of miles offshore, locating them in the first place can be hard. But sport fleets do regularly find and target them, in the Pacific, from central California on northwards.

(From your spelling I guess you're in England. I know very little about the Atlantic salmon fishery. I'd suggest Googling for salmon charters in your area and seeing what their websites have to say.)

The Best time is when they return to spawn they are HUGE in lake Michigan and Alaska. they usually wont bite because they come to spawn and die every now and then they will bite fake bass worms purple on bright days bright colors and cloudy and dark days. they also might bite spoons. the way most people like to catch them by snagging (using a snag hook) though this technique is hard it is usually successful on catchin big ones.
