The ceiling in the classroom or a ceiling in his home? In the classroom, a design of students practicing different kinds of art might be fun. At his home... well, there might be issues of overstepping the line in your relationship. If you are in high school, definitely get your parents permission first! And if you are in college, check with his department to make sure neither you or the teacher will get into trouble first. Then, I suppose the design choice depends on which room and what the teachers interests are.

Paint the ceiling a midnight blue then scatter some fluorescent stars about; either stickers or painted ones. With a black light bulb, the effect should be sooo cool.

Hang things from the ceiling or put posters on it. Of what...who knows. Ask him what kind of art he wants on it.
Or you could do like an outer space type of thing...that'd be cute. Or go with a nature like one. I don't know...

depends on the other colors in the room....browns and beige are neutral unless he has something against beige
