Connie's Corn Beef
No more boiling the corn beef ---- now do it "my way" and you will think you have created the "best"!
Ingredients
l medium to large size corn beef brisket
dijon mustard
Unwrap corn beef and place in roasting pan. Spread enough mustard over the top to cover lightly. Preheat oven to 500 degrees. Do not cover corn beef. Place in hot oven for 20 minutes. Remove from hot oven, turn oven down to 300 degrees. Put the spices from the corn beef on top on roast. Do not add water or any liquid!!! Cover the corn beef completely with heavy aluminum foil This means the entire pan - not just the beef. Place in oven and cook for approx. 3 hours or until fork tender...
This corn beef must be cut on the diagonal to be extremely tender. If you cut it with the grain, it will be terribly tough..Also, you can cook this a day in advance, refrigerate the whole roast. At seving time, slice thin, pour about half can of beer over the slices and heat in oven on low until warm.

You could cook it in the oven, but you might want to use an oven cooking bag. Just to keep it moist. It's a large piece of meat and you wouldn't want to dry it out. You could also cook it in a crockpot.
For those of you who might be confused, corned beef in a can is not the same as a 'corned' beef brisket.

Yes. You actually should unless it's CANNED corned beef. It's really just beef with seasoning cooked in the oven. I supposed you could grill it, but I don't think you'd get the moistness or the flavors.

Don't boil. Simmer in water for 5 hours until it is very tender. The water is needed also to remove some of the salt. It will be too salty baked.

I do mine in a Dutch oven. You can set that on the range-top and keep the lid on, or you can set the Dutch oven inside your kitchen oven and do it in there. I prefer stove-top because it takes less energy.

yes, I'm sure that would taste good.
put it in a roasted pan with a lid and add some water so it doesnt dry out and put in spices like pepper and anything else you like
