Try this one - I made it last weekend, and it was a hit!
* CRUST
* 1 cup all-purpose flour
* 1/3 cup butter, softened
* 1/4 cup confectioners' sugar
* TOPPING
* 1 cup sugar
* 2 eggs
* 2 tablespoons all-purpose flour
* 2 tablespoons lemon juice
* 1/2 teaspoon lemon extract
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* confectioners' sugar

1. Combine the flour, butter and confectioners' sugar; pat into an 8-in. square baking pan. Bake at 375 degrees F for 15 minutes.
2. Meanwhile, in a large mixing bowl, combine sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust.
3. Bake for 18 to 22 minutes or until light golden brown. Dust with confectioners' sugar.

I love lemon bars! The best recipe I ever used was from cookinglight.com. Search for "lemon squares". They're so good that you'd never know they're low fat.
