Technically every human being in heaven is a saint.

Those oficially recognized by the Catholic Church number more than 13,000.

The "biggies" are: all of the Apostles (except Judas) and including Matthias.
Francis of Assissi, called the most Christlike of all Jesus' followers. Patron of animals, domestic and wild.
Patrick, who converted the Irish and is that nation's patron saint.
Joan d'Arc, who got her king crowned and saved France from the English, one of france's patron saints. The other is Denys.
Nicholas, who became the patron of pawn brokers, sailors and children and eventually got demoted to Santa Claus, "patron" of Madison Avenue.
Gregory the Great, patron of the papacy and composer of plainsong, Gregorian chant, still some of the most hauntingly beautiful of all religious hymns.
Therese of Lisieux, patron of the little things.
Barbara, patron of things that go boom.
Catherine of Siena, Doctor of the Church, patron of writers.
Anthony of Padua, patron of lost causes and items.
Thomas Aquinas, patron of scholars.

There's some whose historicity could not stand up to modern scrutiny and they have been dropped from the official list.
Christopher, patron of travelers, being the best known and most appealed to. Even non-Christians have been known to carry a St. Christopher medal, expecially when flying in and around the Mediterranean.

There's lots more. Look 'em up. Enjoy!
Remember, to a Catholic these are just friends in high places who are very willing to help as helping each other in lovingkindness is Jesus' way. They got to BE saints by preferring to do things His way rather than their own.

There's millions of saints; saints are all people in heaven. That's the name they're known for. It would be impossible to know for sure how many are there exactly.
