GREEK SALAD
1 head iceburg lettuce
1/2 c. thin sliced purple onion
1 c. sliced mushrooms
1/2 c. chopped black olives
1 c. crumbled feta cheese
1 sm. can Chinese rice noodles
Salt and pepper
Italian salad dressing (I like Paul Neuman)
In large salad bowl tear lettuce into bite sizes. Add onion, mushrooms, black olives, and crumbled feta to lettuce and toss. Just before serving, add salad dressing, rice noodles, and salt and pepper to taste. Toss well.
Optional: It's also great with grilled chicken.

BAKED SEAFOOD WITH FETA
1 (16 oz.) pkg. frozen flounder, sole, or cod fillets
3/4 lb. med. shrimp
2 tbsp. olive or salad oil
1 lb. sm. white onions
1 lg. garlic cloves, cut in 1/2 inch
1 (28 oz.) can tomatoes
1/2 c. cooking white wine
1 tsp. sugar
3/4 tsp. oregano
3/4 tsp. salt
3 tbsp. chopped parsley
1/2 lb. feta cheese, broke into sm. chunks
Remove frozen fish fillets and let stand at room temperature for 15 minutes. Prepare shrimp as needed. In 3 quart saucepan over medium heat in hot olive oil cook onions until lightly browned. Cook garlic and discard. Stir in tomatoes with their liquids, wine, sugar, oregano, salt, and 2 tablespoons parsley over high heat; heat to boiling. Reduce heat to low; cover and simmer 5 minutes to blend flavors. Preheat oven to 400 degrees. Pour tomato mixture into 2 1/2 quart casserole. With sharp knife, cut fish fillets into bite size chunks. Add fish chunks to tomato mixture in casserole; cover and bake 5 minutes. Remove cover. Add shrimp and cheese; bake 10 minutes longer or until fish flakes easily when tested with a fork and shrimp are tender. Sprinkle with remaining parsley. Serve in soup bowls. Makes 6 servings. 400 calories per serving.

FETA CHEESE OMELET
3 tbsp. olive oil
6 eggs, beaten
1/2 c. crushed Feta cheese
Oregano
Minced parsley
Pour olive oil in to a heated skillet, lower fire and add eggs, shaking the pan to spread the eggs evenly and to keep them from sticking. When the eggs are smooth and almost cooked, place the crushed Feta in the center and sprinkle with oregano and a dash of olive oil. Fold the omelette over the cheese on both sides and cook a few minutes longer, until the cheese melts. Carefully slide the omelette onto a platter, and sprinkle with minced parsley. Serve at once with chilled sliced tomatoes for a perfect accompaniment.

Feta Cheese And Cucumber Salad
Ingredients
1/2 pound feta cheese
Juice of 1 lemon
2 tablespoons olive oil
1 red Italian or large mild onion, finely chopped
1/2 large cucumber, peeled and diced
White pepper
Directions
Crumble the cheese with a tablespoon of water, using a fork, and work in the lemon juice and olive oil.
Mix in the onion and cucumber, and add pepper.

This is super easy.... get a box of frozen creamed spinach and some frozen perogies (it's like a potato ravioli thing). Cook the perogies, either boil them or heat them in a skillet to get 'em a little crispy. Pour the heated spinach over top and then the feta over the whole thing. Let in sit on the hot skillet a little while to soften the feta..... wonderful!

BAKED ZUCCHINI WITH FETA & TOMATOES
Ingredients:
4 cups zucchini
1/2 cup Sheep & Goat's Milk Feta
1 cup Fresh chopped tomato
1 tsp. Dried Greek oregano
1 TBS Extra virgin olive oil
Directions:
Place the zucchini in a medium-size baking dish. Top with the chopped tomato. Crumble the feta cheese on top.
Sprinkle with oregano and drizzle with the olive oil.
Bake uncovered in a preheated 350F oven for 30 minutes.
Serves 4.
Zucchini Pappardelle with Roasted Tomato Vinaigrette, Arugula and Feta Cheese
2 tablespoons good quality balsamic vinegar
1 tablespoon Dijon mustard
1/2 teaspoon honey
Big pinch gray salt
4 tablespoons extra-virgin olive oil
1/2 teaspoon lemon zest
Freshly ground black pepper
4 1/2 pounds zucchini
2 cloves garlic, minced
2 teaspoons thyme, minced
1 teaspoon rosemary, minced
1 teaspoon sweet smoked Spanish paprika
Cherry tomatoes (20 large or 40 small)
2 bunches arugula
1/2 cup crumbled feta, preferably French (about 3 ounces)
1/2 cup pitted and chopped kalamata olives (about 3 ounces)
Preheat the broiler.
To make the dressing, in a small bowl mix the vinegar, mustard, honey, and salt.
Whisk in 3 tablespoons olive oil. Season with the zest and pepper.
Using a mandoline, slice the zucchini lengthwise into 1/8-inch thick pappardelle turning the zucchini and slicing on 4 sides only until the seeds in the center are reached.
Discard the centers.
In a small bowl combine the garlic, thyme, rosemary, and paprika with the remaining tablespoon of olive oil.
Spread the zucchini slices on a large baking sheet and brush them with the garlic mixture.
Broil for 3 minutes until light brown.
Coat the cherry tomatoes with the remaining garlic mixture in a bowl.
Put them on another baking sheet and broil for 1 to 2 minutes or until some skins pop and the tomatoes get slightly caramelized.
Put the arugula in a serving bowl and top with the zucchini and tomatoes.
Drizzle with the dressing. Sprinkle the feta and olives on top and serve.
Yesil Biber Kizartmasi
(Green Peppers stuffed with Sheep Cheese )
4 green peppers (long sort)
200 g. sheep cheese (feta)
2 eggs
3 T. chopped parsley
paprika to taste (try 1/2 t. first)
olive oil
Cut off the tops of the peppers and remove the seeds.
Soak in salt water for about 30 minutes. (
If the cheese is very salty, soak this in plain water too.
Drain well before using)
Break up the cheese with a fork and mix with the paprika, parsley and the beaten eggs.
Fill the peppers almost to the end and fry in hot olive oil.

you can cut a red peper in half de-seed and boil for 10 mins.
then place on a lightly olive oiled baking tray upside down and fill with feta cheese and a drop of olive oil.
you could also add a little pepper or oreagano.
roast for bout 30mins gas mark 4-5.
ENJOY
you can also do this with tomatos but dont boil. just scoop some of the inside out add cheese and roast.
nice with some bread on the side

Feta Chicken serves 6
INGREDIENTS
6 skinless, boneless chicken breast halves
6 ounces tomato basil feta cheese, crumbled
1/4 cup Italian-style dry bread crumbs, divided
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Place chicken breasts between 2 pieces of waxed paper. Gently pound chicken with flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wax paper. Place 1 ounce of feta cheese in the center of each chicken breast, and fold in half.
Spread 2 tablespoons bread crumbs in the bottom of the prepared baking dish. Arrange chicken in the dish, and top with remaining bread crumbs.
Bake 25 to 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Feta isn't good to cook with so you are restricted to putting it with stuff i.e as already suggested salad specially tomato. Feta is salty so don't put it with anything else that tastes that way. Hard boiled eggs aren't too bad either.

ok get some french bread and cut into chunks put under grill with a sprinkling of olive oil and brown, don't burn. chop some tomatoes, red onion, fresh basil and mix with the bread then coat with a dressing made up of olive oil, red wine vinegar, red pesto and fresh red chillis. oh yeh don't forget to crumble in the feta. this is a deilcious and easy to make meal. good luck.

you can make a feta and spinach omelette - whisk 2 or 3 eggs together with crumbled feta and spinach (doesnt really matter how much) and fry it in a big frying pan for 5 minutes or until the egg is nearly cooked then brown it under the grill, still in the frying pan. it makes a really nice fluffy omelette

boil up some pasta and drain then add some (cooked) bacon strips and ssome sauce (mayo etc) then add the feta cheese cut into cubes (the heat from the pasta will melt it slightly) or you could use it to top up a frozen pizza cus the texture is brill
