This is something that's puzzled me for a long time, help!.

Officer, Firefighter, and Medic are all appropriate forms of address (provided he/she IS a firefighter-medic), but if things get kind of casual and chummy -- like he/she is calling you by your first name and making light conversation, you could use "Chief" or "Captain" in a lighthearted way.

Not knowing even if a fireman (or woman) has rank, Sir or Ma'am would work.

Should you be fortunate enough to know his rank, use that to address him. Otherwise, I would say "Officer" or "Sir".
