Glazed Strawberry Pie Filling
Servings: Enough to fill 1 [9-inch / 23-cm] baked pie shell
or 12 tart shells
1 1/3 cups [275 g] sugar
1/4 cup [60 mL] cornstarch
1/8 teaspoon [0.5 mL] salt
1 1/2 cups [375 mL] cold water
1 tablespoon [15 mL] lemon juice
Red food coloring
4 cups [1 L] fresh strawberries, rinsed then stemmed
Into a casserole, mix together sugar, cornstarch and salt.
Slowly pour in cold water, until well combined.
Simmer until clear, for approximately 10 minutes [220°F / 104°C on a candy thermometer], stirring from time to time.
Stir in lemon juice and enough red food coloring to get a light hint of red.
Into a bowl, pour mixture all over strawberries, stirring delicately.
Leave to cool.
Use to fill cooled pie shell or tart shells; refrigerate until set.

Frozen Strawberries
1 quart strawberries, de-stemmed
1 (3 pound) block dry ice
Wash strawberries and place in a paper towel-lined colander. Cover with another paper towel and place in the refrigerator for 4 hours.
Break your dry ice into small pieces, and toss with berries in a large bowl. Place into a container and cover with a towel. Place this in a cooler for 25 to 30 minutes. Remove berries and put into sealable bags and store in the freezer.

If you want to make like a jam you should defrost them in some cold water and then simmer them in a pan and add some sugar about a cup or half a cup with 2 tsp of corn starch and stir it just a little bit and when it becomes sticky it will be a filling.

OK what you do is first take the strawberries out of the packet. Then you take however much you want. After that you put them in a strainer or a bowl with hot water running over them. Do that for about 30sec. to 45sec. or until unfrozen. It is up to you weather to add sugar after you rinse them and then mix them with whatever you making. Hope this works for you!

you just thaw them out first then look in your cook book.
doesn't matter that there frozen you just have let them thaw before you start bakinig. you fillin you meant pie filling right?; not good for much else except ice cream topping. since there gonna be kinda mushy is that a real word : "mushy". its ok. just thaw them and follow instrctions in cook book. if all else fails. put them in the blender with ice cream : cant hardley go wrong there.
