I remember that same panicky feeling. Be calm, this is exciting! Just use common sense - don't give him a giant drink in the hour before you leave, make sure he goes before you leave and when you are near the bathrooms, ask him if he has to go. Don't panic - the more anxious you are, the more anxious he will be and that will only lead to trouble. Good luck!

Have him use the bathroom right before you leave. Half way through your trip, stop at a bathroom in one of the stores and have him "try" to go again.
It's what I did with my boys. It's the only way I could manage to not pack a suitcase full of clothes just to run a few errands. I had them "try" about every 30-45 mins.
But remember that there is always a cause and effect. The downside to my method? Until they were about 8 years old, I knew where every public restroom in the area was. I was beginning to think they just wanted to look at them all. :)

It will be a lot easier then you think it will be. I remember I was nervous the first time I took my son out.. just relax. Make sure you have him to potty before you leave and you have the right frame of mind of just getting in and out. Keep an extra pair of pants and underwear in the car for a couple of months just in case.

Okay deep breath in and now out. My daughter is 2.5 and we just got day trained. We go out for hours a day and she has had no accident. We just take her to the potty every 45 minutes while we are out. The only accident she has is at home, once a day. Go figure.

make sure to remind him to go,take him before you leave the house and before you leave the store
you can browse and such it's fine just take him every hour or so and tell him he needs to tell you if he needs to go and tell him he'll get a treat if he doesnt potty in his pants (make sure to actually get him the treat of course) let him pick the toy at the 2nd store
take an extra set of clothes

No i think you've already covered it all. You're way more prepared than I ever was. Have him go before you leave and maybe once while you're out. Currently my three year old won't pee in public. So he holds it until he absolutely can't any longer. It's rather frustrating, but that's life. I hope you have better luck.

have him pee before you go , don't swoop and go, relax, bring a change of clothes or two with you, stop by all bathrooms and have him try each time tell him you are proud of him he is doing a great job, you seem to be panicking don't

take extra clothes just in case and good luck. i was more nervous than my son on his first outing. we did have ab accident in the car. we goofed around to long in food lion and he didnt tell us til he was peeing. long past that now good luck your in the home stretch
