You can't. If you are talking about social security, you can request a statement and they'll mail it to you. If you are talking about federal income tax, you can call the IRS and they'll send you transcripts of your returns for the last three years, or for a fee you can get copies of returns for the last seven years. You can't go back 11 years though.

You generally can't. The IRS does not make that information availabe on line and nor do any of the states. Property taxes on your home MAY be available on line as that IS public information. Not all jurisdictions make it publicly available, however. If you want to know how much you paid in sales and excise taxes you'd have to figure that out yourself as records are not kept on who paid what.
Addendum: For UK income tax, contact the Inland Revenue. I doubt that they make that available on line though I could be wrong on that. You posted your question in the US forum so your answers will be US centric.

You can't. You can get an account transcript for more recent years if you call IRS at 800-829-1040. Old years are taken off the system if there has been no action on them for three years.

You can't! There is no record of sales tax that you paid nor the gas tax, unless all of your purchases where made on credit cards.
