for example, i can get myself from 100lbs to 96 in 7 days by eating 500 - 700 cals a day and doing quite alot of exercise. yet ONE day of eating 2000 - 2500 cals and i gain half of it back. its not fair! why is it so much harder and take so much longer to lose weight than gain weight?

Frustrating as hell isn't it ? Unfortunately we are "pre-programmed" for weight gain in general (most of us that is) and that is evidently because our ancient ancestors (unlike us with food on every corner) had to go long periods of time in between harvests and kills and were often on the move for that period with very little nourishment available to them. The body systems were set up to "store" food automatically to sustain life during that time. As we have involved that "storage" response has stayed with us. In addition to that it isn't necessarily the number of calories but the types of food that we ingest that trigger the fat storage. As you are familiar I am sure our diet now consists of larger amounts of empty carbohydrates, non-soluble fats, sodiums and chemicals that our bodies barely recognize as food. Also, this is just getting better isn't it ?, the type of exercise we do and how we vary it up or cross-train makes a big difference. Muscle weight uses up calories 7 times more efficiently than fat weight - so resistance or strengh training is very important. And that garbage about 3-4 times a week exercise - is garbage - more like 6-7 and for a minimum of an hour not 15-30 mins. Aging and hormones factor in too. Sorry, it is a struggle. PS-- Depending on how tall you are, how old you are , your body frame and BMI---you may need to gain weight - 100 pounds - yipes ! Thin is not in, but being fit is beautiful.

may be because we eat much more than we exercise. Our normal meals for a day is usually 3 times, that excluding snacks and tea; while we only exercise once a day.

because your body likes to store fat so that in case you need it later it'll be there. it sucks though. just make sure you're exercising so if you binge once in a while your body will burn it off quicker since exercise raises your metabolism.

It's easier to eat than it is to starve. Sad, but true...
