I guess in the order of favorite to least favorite;
1. 30/06
2. 7mm Remington Magnum
3. 308
4. 270
5. 30/30

I would not hunt deer size animals with a smaller caliber than the 6mm.

the caliber is the diameter of the bullet so there is only 2 that I deer hunt with 7mm which is .284 caliber and .308 or 7.62 or 30 cal . as far as cartridges are concerned

But those are my picks clearly everyone likes different chamberings for the rifles most dont enjoy shooting these rifle and say they are to much for thin-skined deer size game but usully its because they have heavier recoil than standard deer cartridges such as the 270 Win 30-06 or 308 Win which is the civilian verion of the 7.62 NATO round.
But personally I like Long flying, Hard hitting bullets with very flat tradjectories
It also matters where you hunt and the ranges at which you might get a shot and whether you yourself are capable of shooting at ranges of 350 yards or more
Close quarters hunting requires slower moving heavier bullet to do the job as the faster magnums do not exhibit the proper bullet expansion at close range due in large part to the thin skin and high vlocities so when hunting at short range while i prefer to just use a bow you could use 30-30 or shotgun slug or 444 marlin

My two favorite deer calibers are the .25-06 Remington and the .270 Winchester.
