worth while to try but with a small quantity
i just bought olives like what you see on tree,and done them,sure you do not mean that.
so just have this small quentity,take it out put them without the water (drain off the water),bring one green pepper,cut it to little circles then you might have 10 slices may be or so,each of 1 1/2 cm.,bring one lemon cut it in halfs,then quarters one once more,bring a garlic (not if you do not want) 5 gms in powder,(half a tea spoon)or two little pices,
the thing is done now,mix together,just pure mixing,
bring a glass container(bottle or a jam container),put them in put olive oil till they are covered,they are ready to eat,if they are hot from the pepper taste will be better in two days

this is to be kept on shelve no fredge is needed

Once opened, jarred or canned olives should be refrigerated for storage for food safety reasons. Olives should always be served at room temperature. Take them out of the fridge 15 minutes before serving for best flavour.

Store unopened olives on pantry shelf away from light
After opening, store in fridge.
After opening the green ones I pour a small amount of olive oil on top. They last longer that way

I even have considered them circulate mouldy even interior the refrigerator - on the tops if the oil is long gone. i might save them interior the refrigerator totally lined in brine. From the salad bar they have in basic terms oil on them and each each now and then different factors that may circulate off.
