The question isn't whether one or the other wants our souls.
The question is why each one wants our souls.
Satan doesn't want souls for himself, he just want to deny souls for God. God is the one that gives only two choices to us, heaven or hell. And God's the one that forced satan to be in charge of the only alternative to heaven. If God gave souls a third alternative, satan have little personal concern for humanity.

It helps the story and plot along....
Point of view, only.
Just like...why are the Sith evil, and the Jedi, good? They both want power, right? The Sith gain their power from emotions, Jedi get their power from understanding....all-in-all it's usually not a bad thing...
